Here are some things I can think of, by no means complete.

In and around Alnwick there are Alnwick castle and gardens, Barter Books, and Hulne Park just to the North of the town centre.

There's a lot of coastline to visit, with great quiet beaches and the Northumberland Coast Path to link it all up. From North to South: Holy Island (castle and priory), Bamburgh Castle, Seahouses (boat trips to Farne Islands), Craster (kippers, Dunstanburgh Castle), Alnmouth (town and beach), Amble (harbour and seafood centre), Hauxley Wildlife Discovery Centre (birdwatching and good cafe), Druridge Bay Country Park, and Cresswell (beach and Drift cafe).

To the West you've got the National Park, with lots of walking opportunities in the Wooler area (Cheviots to the West), Breamish Valley (from Ingram) and around Rothbury (hills to the North, Simonside Hills to the South, and upper Coquetdale further West). Cragside (National Trust, near Rothbury) is worth a visit.

Couple of random options are Northumberland Zoo (off the A1 around 10 miles South of Alnwick) and Chillingham Castle (about 15 miles North-West of Alnwick).

Not sure what the covid restrictions will be by then, but since most of the good stuff is outdoors anyway you should hopefully be OK.
